Case Study - Paul Wayne Gregory
Specialising in designing and supplying bespoke centre displays, sculptures and unique hand crafted chocolates for any event, Paul sells his handmade chocolates wholesale to restaurants and hotels. He can also, however, provide perfectly packaged small gift boxes, which can be exclusively designed for corporate business or special private functions. He is happy to discuss which delicious centres to include from his repertoire of carefully sourced ingredients with the client, to ensure that each gift box is customized to taste. Paul started his working life as a baker working in a supermarket chain, but his love of his craft was so great that he took a year out to go to catering college. Happy that he had now found his vocation, he perfected his chosen skill as a pastry chef and master chocolatier over a period of many years under the watchful eye of some of the most prestigious chefs both in the United Kingdom and Europe. His long apprenticeship has unquestionably paid dividends. Although in business for a relatively short period of time, he has already worked with Searcys the well known Knightsbridge caterers and the Royal Opera House. He is currently working on a special presentation for Microsoft. Paul is hoping to greatly expand his production in mid-2006, and is already working on the production of vegan chocolates made to his own exacting standards. He is making sure that his expansion is intelligently managed with the help of southlondon.biz whose adviser, Max Felstead, is mentoring him and ensuring that this important next step is managed in a sustainable way.
